Note: winter trips can be cold and wet.

For the cold, you should wear warm clothing.  some combination of:

Warm layers of man-made fibre or wool (not cotton)
Fleeces
Woollen socks
Warm hat
Wetsuit boots or trainers

For wind and wet, you should bring a waterproof top, a canoeng cagoole is the best.  Also waterproof trousers if possible.

You should also bring a towel and complete change of dry clothes in case you get wet during the trip.

Food:  On winter trips it is easy to get hungry and thirsty so bring:

A bottle of water
A flask of coffee, tea or soup
Snack bars, energy bars or sandwiches in a waterproof container.
Put all of these in a container which can be secured to the inside of your boat so it is accessible during the trip.
